Pesto Baked Salmon With Heirloom Tomatoes And Artichokes

I love fish! Salmon is my favorite of them all so at work when my boss Tammie asked if I've ever made pesto salmon I realized I haven't so tonight was the night! Here's How I did it...

* Preheat oven to 400 degrees
* Use organic olive oil on bottom of pan
*Rub salmon top and bottom with oil
* Top with garlic oil, lemon, and pesto
* Add artichokes on top
* Add baby Heirloom tomatoes around salmon in pan
* Bake for 15 min checking regularly 

Rice and Asparagus Side Dish

* For the rice I used organic basmati rice, while cooking I add organic cayenne pepper and organic turmeric for the extra flavor and the anti-inflammatory properties they both provide. That's why it has  a yellowish tint. 

* The asparagus I cooked the same as the last post
