Cheesy Squash Bake

Mmm....

I used some yellow squash, zucchini and carrots.

Cut them up.

You'll need half a white onion, shredded monterey jack cheese, fresh basil, and bread crumbs.

Cover the bottom of the pan with the bread crumbs in a thin layer.

Do one  layer of the squash.

One layer of carrots.

Add basil.

Add a layer of tomato sauce or pasta sauce.

Then repeat the layering all over again.

Till you reach the top. Pre heat oven for 400 degrees and cook for 30 min.

All done! This will make a lot of food and can probably feed up to 10 people. It's a good thing to make for a dinner party or you can just put the leftovers in tupperware and take it for lunch for a few days.

It tastes as good as it looks!

Potato Salad With Green Beans, Dill, And Ricotta

I love my carbs and my favorite are potatoes! Since I don't eat a lot of potatoes when I do I make them count in deliciousness! This is one of those recipes!

You'll need : Green beans and small potatoes. I really like using the mixed baby purple potatoes in this recipe but I didn't have any at that moment. Trim the ends of the green beans and cut the potatoes in half.

1 juice of a lemon, and 1/2 cup of chopped dill.

1/2 cup of ricotta cheese.

I like to have some bigger pieces of dill to add for presentation at the end to make it look pretty!

Cook potatoes in a pot of salted water until tender, but not falling apart, about 9 min. Add green beans in the last 3 minutes of cooking and cook until tender.

Place in bowl toss in olive oil and add the juice of the lemon. Let cool slightly and then add the ricotta  and dill. I sprinkled paprika on top for a pop of color. Salt and pepper to taste.

So easy and Soooo good!!!!

Turquoise Dream

Shirt Anchor Blue, Skirt With Attached Belt Kassety, Necklaces Forever 21, Earrings Express, Cuff Forever 21, Shoes Jessica Simpson, Purse From Ross, Sunglasses Ralph Lauren.

I love maxi skirts about as much as I love maxi dresses in summer, which is a lot!!! So comfortable yet sexy at the same time, almost effortlessly. I was really drawn to the color of this skirt because my favorite color is teal. It's odd that this is also the name my mother wanted to name me...Teal Green? Wow mom, thank god that didn't work out and my dad decided on Sheena Green. Anyway I bought this cuff a long time ago and never had anything to go with it so when I rediscovered it today I was excited to incorporate it into my attire! These wedges are to die for! They have all the comfort of a wedge with an added bonus, I can slip out of them fast and walk around bare foot which I'm known to do often.

Hotel Del Coronado

I love the way this dress flowed in the ocean breeze and the way the colors resembled the beautiful blues of the water nearby. I also love the tassel details that swing back and forth while you stroll along.  This dress allowed me to participate in the graceful beauty that Hotel Del Coronado eludes.

Dress Forever 21, Necklace LaVintage, Sandals Merona from Target, Ring Vintage Baubles, Sunglasses Ralph Lauren, On Toes China Glaze.

Matching turquoise and gem necklace from LAVintage. Love this one here

At the main entrance of Hotel Del Coronado.

A very cool metal sign.

The resort pool.

The beach as soon as you walk out of the hotel is amazing and the view, breath taking.

The view of the hotel from the beach.

Smile! You're on vacation!

 Some more beautiful scenery.

A Falcon exhibit that just happened to be going on as I walked by.

An up close view of one beautiful bird with some serious talons!!!

Here's some background on Hotel Del Coronado in case you are ever in San Diego, CA,
you must check it out.....

Built in 1888, this classic beachfront respite near San Diego, California has long been heralded as one of America’s most beautiful beach resorts. A pronouncement underscored by its designation as a National Historic Landmark in 1977. Coronado was recently named No. 1 Best Beach in America for 2012 in the highly anticipated list by Florida International University professor and coastal expert Stephen P. Leatherman, a.k.a. "Dr. Beach".
This is the first California beach to win the honor in the 22 years the list has been published.
Says Dr. Beach: "Coronado Beach is the toast of Southern California; it is a veritable oasis by the sea, measuring hundreds of yards wide. With its lush subtropical vegetation, unique Mediterranean climate, and fine sparkling sand, beachgoers flock to this beach for great ship - watching and the summer’s mild surf. The local landmark, Hotel del Coronado, was built over a hundred years ago, offering spectacular architecture and Old World elegance. Kings, sheiks, actors, and actresses have stayed at Hotel del Coronado, where food and drinks are served on the beach, and the hotel provides a great location for celebrities."

Destination : San Diego, CA

I was on vacation this past week and went to San Diego for my little brothers graduation from the Marines. It was a very proud moment for my family and also a very sad one for me. As I watched him  I began to tear up because our father was not there and even though I know he can see him, it saddened me to my core that he wasn't there to tell him how proud he was of him. I know he would be. Not just of Christian but of me and both my sisters. So here's to the Green kids that beat all the odds and statistics to became amazing adults and stellar individuals!

I wish I was in as good of shape as him! Kinda jealous, not gonna lie.

After graduation I hit the nearest beach and found a Joe's Crab Shack! I love this place! I usually go to the one in Sacramento, CA. I ordered the crab nachos and they were exceptional. I highly recommend them!

I also had a Southern comfort lemonade which came in a Joe's Crab Shack mason jar that I got to take home! How cute is that?

Shelter Island's Bali Hai is a must if you visit San Diego! Their drinks are really strong and the view is breath taking!

I ordered a navy grog and almost fell out of my chair. Seriously strong and seriously good!  I don't remember what was in it, good.

Finding shells on the beach.

The best part of my trip as far as food goes. I've never seen dishes this big in my life and never had breakfast this good. Hash House "twisted farm food" is unreal!!! YOU MUST EAT HERE! I hope you dont mind waiting 30 minutes to an hour to get in the place because apparently EVERYONE has caught on to the fact that this place is worth the wait!!! I promise, you will not regret it and never forget it!

I got this coffee there. It's called the famous Ultimate S'mores Mocha, it had a layer of melted marshmallow on top that you had to literally eat through to drink your coffee! It was so wrong... but so good.

While visiting San Diego Ocean Beach was having its 125 Birthday festival! It was so much fun and I bought tickets to the bloody mary competition where 10 local businesses competed in a blind tasting competition. After about 3 tastes in I realized one can only drink so many bloody mary's before you feel sick. It was still a fun experience and there was so many things to do, unlike my hometown Stockton, CA which made returning home.... challenging to say the least.

My make up for the day: Urban Decay Naked Pallet, Sin on highlight and inner corners of eyes, Naked on lids blended to crease. Makeup forever HD foundation in #127 Tarte amazon clay 12 hr blush in dollface. M.A.C. Viva Glam Lipglass in gaga.
