Eggplant Caper Feta Bruchetta




I have to say that these were absolutely great!!! I was a little skeptical but they have proven themselves to me and would make a great appetizer for any party!

  




First I cut an eggplant in 1/2 inch rounds. Preheat oven to 425 degrees. If you are feeding more than 2 people I would do 2 eggplants. Arrange them on a roasting sheet coated with olive oil and add a generous amount of olive oil on top. Salt and pepper to taste. Roast for 15 to 20 min. Then flip the rounds over and roast for another 10 min.






Meanwhile, dice 2 large tomatoes,  and half of a red onion. Add 1/2 cup of feta cheese, 2 tablespoons of capers, and 3 tablespoons of mint leaves. Mix in 2 teaspoons of red wine vinegar and 4 tablespoons of olive oil. Mix together and add ground pepper to taste.






When the eggplant is done arrange on a platter and add a spoonful of the salad over each round.





Eat immediately!
